How to enjoy | Please use appropriate glassware. Depending on the ambient temperature, serve this wine between 44 and 48 degree F. Decanting this wine for some hours before you enjoy it will benefit the expression of its character greatly. |
Food pairing | It pairs very differently from its fraternal twin - The Spontaneous One. It cries for Oysters, crabs, . Food with fresh herbs and sushi with lots of wasabi may go very well with this wine. Please explore...... |
What you might taste | Lemon grass, passion fruit, grape fruit and floral aromas with vibrancy on the palate. It tastes like a 'day of spring' in the glass. It is dry and zesty and finishes with a mineral edge to it. The Controlled One" was fermented with a cultivated yeast while "The Spontaneous One" was fermented on its own native yeast. |
