| How to enjoy | Please use appropriate glassware. Depending on the ambient temperature, serve this wine between 44 and 48 degree F. Decanting this wine for some hours before you enjoy it will benefit the expression of its character greatly. |
| Food pairing | What comes to mind for this wine is hearty German cuisine..... Just to name a few of Johannes' favorites such as pork tenderloin with spatzle and creamy mushroom sauce and sauerbraten with bread dumplings. I would not recommend spicy food but explore.... |
| What you might taste | The product has a mellow mouthfeel showing a delicate palate with a slight tartness. The color is light yellow with a mixture of beeswax, mango, golden delicious floral aromas. The Controlled One" was fermented with a cultivated yeast while "The Spontaneous One" was fermented on its own native yeast. It took five weeks for this wine to start its fermentation and lasted for four months. |
